Vegetable
Most often, dry Indian vegetable recipes, also called sabzi, pair up quite cosily with potatoes. Since they are dry, they are typically eaten with soupy dal (lentils) and some kind of homemade flatbread like roti.
Try the ever popular aloo gobi or this cabbage sabzi. And if you like spinach, check out aloo palak. Easy to make and delicious to eat!
Vegetables with gravy, on the other hand, can be had with rice. Dum aloo and baghare baingan are perfect for eating with rice.
